    Tasting Notes:

    Made with 50 year old vines, this wine has a blend of 80% Chardonnay, 20% Pinot Noir. Originating at a 130 year old family estate in the heart of the Côtes des Blancs, 40 km south of Reims, it is full of red berries and brioche notes on the nose. Luscious and mineral with a beautiful length on the palate.

    CHATEAU BONNET

     

    The château is located in Chénas, one of the 10 Crus of Beaujolais, a few kilometers south of Burgundy. The Perrachon family have been winemakers for generations (back to the 17th century), and took over Château Bonnet in 1973. They grow organically (not yet certified) about 20 hectares of mostly  gamay, along with Chardonnay, limiting plowing throughout the season to promote life in their vineyards.

     

    Champagne method, Blanc de Blanc, 100% Chardonnay, clay and silt vineyard. Nose of tarte tatain, ripe apple and pear with a discreet touch of brioche. Round and smooth on the palate, this wine is a great alternative to Champagne!

    Tasting Notes:

    Made by a traditional sparkling method on an organic 13 hectare family estate in the South of Languedoc, this Champagne is floral and fruity on the nose while the mouth is savoury with fine bubbles. A Chardonnay, Chenin Blanc and Mauzac blend, with no dosage (Brut Nature). Fried scallops are its best friends!

    100% Pinot Noir (bleeding rosé), Dosage 7.8g/L

     

    Such a tiny production, only 300 bottles produced every year. This wine sees a little bit of oak ageing for a smoother mouthfeel, and is aged on lees for up to 5 years which adds complexity.

     

    Delicate and yummy at the same time, this rare Champagne exhibits fragrances of blackcurrant, redcurrant, raspberry, and hint of violet in the background. In the mouth, this wine shows an incredible length and balance.

     

    Refined charcuteries and cheeses will compliment this Grand Cru, slightly spicy dishes like tajine can be a very interesting pairing as well!

    Blanc de Noir (100% pinot noir), Dosage 5.6 g/L

     

    Those vines were planted 70 years ago by Ophélie’s grandfather, they now produce the most emblematic wine of the estate.

     

    Candied fruits on the nose (quince and pear), along with some biscuity notes from the 7 years lees ageing. On the palate, exotic fruits such as lychee and mango, grilled hazelnut and almond with a floral touch. The bubbles are very delicate.

     

    Fried mushrooms and poultry are his best friends, but it is also beautiful on its own!

    8 years on lees gave this wine fine bubbles and a stunning silky texture. The bouquet is refine, with aromas of stone fruits, brioche, patisserie and hawthorn.

     

    A fine wine to pair with scallops, cod in butter, but also with desserts such as stir fried Mirabelle plum.
